Oatmeal Banana Blueberry Muffins

baking muffins recipes Jul 08, 2019

This is a super healthy and tasty Oatmeal Banana Blueberry Muffin recipe with no refined ingredients whatsoever! My version was inspired by my neighbour, Elaine, who served these delicious muffins at our monthly neighbourhood coffee get together. Her’s had chocolate chips instead of blueberries; 3 cups oats, no flour or hemp hearts. I also replaced the honey with maple syrup, and milk with buttermilk. > Full recipe...

Best Ever Chocolate Chip Pecan Cookies

baking cookies recipes Jun 01, 2019

Chocolate Chip Pecan Cookies — Here’s one for all you cookie monsters out there! These are deliciously healthy cookies made with wholesome, unrefined ingredients. You can have one or two without feeling guilty. The cookie monsters in my house claim these are the best EVER!! Due to my gluten sensitivity I use a combination of gluten free and stone ground spelt flours. They couldn’t tell the difference! However, you can use 1 cup all purpose and 1 cup spelt.

To make sure my cookies are going to spread just perfectly, I usually bake just a few first to test the spreadability of my cookie dough. If they didn’t spread enough, you can always add a bit more liquid. I especially don’t like cookies that turn out flat like pancakes! You shouldn’t have that problem with this recipe because the dough is on the thicker side due to the unrefined spelt flour and coconut sugar. > Full recipe...

Gluten Free Lemon Cranberry Loaf

baking loaf recipes May 14, 2019

It has a beautifully moist and cakey texture. No one will ever know it’s gluten free unless you tell them. With the cranberries contrasting with the lovely yellow colour of the lemon inside the cake and the coconut sprinkled on top, this loaf looks as gorgeous as it tastes!

The secret to the beautiful texture of this loaf is the gluten free flour blend. Click here for the recipe.  You can use this flour cup for cup to replace regular flour in your recipes. It works beautifully just as long as you add the xanthan gum which binds it together to give your loaf the same texture as when baking with wheat all purpose flour. > Full recipe...
